Pasta + Greens + Sundried Tomatoes
Recipe Serves 2:
Drop 1/2 pound short pasta into boiling, salted water.
While the pasta is cooking, chop 1/4c sundried tomatoes in oil and mince 3 garlic cloves.
When there are about 7 minutes left on the pasta cook time, sauté the minced garlic with 1.5tsp red chili flake in evoo. When the garlic begins to brown, add the sundried tomatoes and 1/4c white wine. Let simmer for 1-2 minutes, or until wine begins to evaporate. Add 6 cups baby spinach and 1 cup arugula to wilt while the pasta finishes cooking (this takes 3-5 minutes). 
When the pasta is al dente, drain & save 1/4c pasta water. Add c.3oz goat cheese, the pasta, and the pasta water to the sauce pan. Let cook until the goat cheese becomes incorporated into the sauce (1-2 minutes). Add salt & pepper as needed.
Garnish with parmigiano & fresh parsley.
